Chef Harry Williams started his career as a butcher and is now Executive Chef at the immensely popular Alpha Street Kitchen & Bar in Cambridge. Harry loves to bring international flavours to the plate and works with his ingredients to create depth of flavour with an element of surprise. Here he plates up a dish - with a nod to his Samoan heritage - of smoked lamb cutlets with a spinach and coconut cannelloni. Harry is a first time Ambassador Chef for Beef + Lamb New Zealand and says being a mentor to younger chefs and passing on his knowledge is very important to him and also to the industry where talented young chefs are in short supply!
