YOUNG AMBASSADOR CHEF TO LEARN ABOUT REGENERATIVE FARMING WITH PROVENANCE MEATS AND SHORTLANDS STATION

We are delighted to announce that Provenance Meats and Shortlands Station will be supporting the 2021 Beef + Lamb Young Ambassador Chef by sponsoring a farm visit and the sharing of knowledge on their regenerative farming practices which produce outstanding New Zealand lamb.

The home of Provenance Lamb is in the stunning high country of central Otago where the Crutchley Family have been farming on Shortlands Station since 1946. With hard work and shrewd management, over three generations, Shortlands grew both in size and output. More recently, a second farm, Glenmore, has been developed on the coastal hills of East Otago. It is from these farms that Provenance sources its lamb.

It is from the Provenance Farms that some of the best lamb in the world is produced using regenerative farming practices. New Zealand chefs are becoming more interested in the ethics of food production – land and water use, the quality of life for animals. The Provenance lambs live well because they are fed well and cared for at each stage of their life.

It all starts in the soil. Their comprehensive farming protocols ensure the biological life of the soil is replenished. Sustainable land use is helped by natural inputs, minimal use of fertilizers and careful grazing. Living soil grows nourishing forage. The result is exceptionally healthy animals.

Provenance lambs are especially selected to thrive in their environment. They are raised and cared for on extensive New Zealand farms, freely ranging across hills and paddocks as they graze. When it comes to transporting and processing, every care is taken to make sure our lambs are stress free.

The young chef will get the chance to see the process of raising Provenance lambs from behind the farm gates right through to learning all about the chef ready cuts available.

Beef + Lamb Platinum Ambassador Chef, Michael Coughlin has been serving up the perfect lamb for over thirty years and will impart his knowledge to the young chef with advice and techniques on how to get the best out of New Zealand lamb on their menus.
